Fried Beef with garlic and celery

  1. Ingredients:

- Beef corn 500g

- Garlic 200g

- Celery 15g

- Ginger 1 branch

- 1 onion bulbs

- Dried garlic 1 tubers

- Tomato 1

- 1 bunch Coriander

- Olive oil, cornstarch sufficient

Fried blinweed with garlic/ Garlic water spinach

  1. Ingredients:
    • 2 tbsp vegetable oil

  • 1 bunch spinach (can substitute with spinach, sweet potatoes, depending on preference)

  •  4 garlic.

  •  1 tbsp fish sauce

  •  ¾ teaspoon sugar

  •  1 chilli chopped

  1. Preparetion:

  • Wash spinach

  • In medium saucepan, add 5 cups of water and boil. Blanched spinach in the past for the boiling water, boil for 1 minute, stirring.

  • Picked vegetables and rinse with cold water. Squeeze to remove excess water again, put aside.

  • In a frying pan, into the boiling oil at medium heat until hot oil. Chilli, garlic and stir-fry for 1 minute over, stir constantly to avoid burnt garlic.

How to make "Sweet green bean gruel"
  1. Ingredients:
  • 50 - 100gr of green bean
  • 250ml water.
  • 100ml coconut milk.
  • 3 teaspoons tapioca.
  • 100 - 200gr sugar.
  • A bit of salt.
  • 1/3 teaspoon vanilla.
  1. Preparetion:
  • Green bean: clean and soak in  warm water about 1 hour.
  • Tapioca: soak in 200ml water.
  1. Practice:
  • Cook green bean with fresh water and a bit of salt about 30-40 minutes until it's quite tender.
  • And then, add suger, tapioca, coconut milk . Simmer until tapioca, green bean are tender. It's about 5 minutes.
  • Last, add vanilla. When it's just boiled, turn off the heat immediately.
Taste is good when eat Sweet green bean gruel with ice!

How to make Pho (Phở)

How to make Pho (Phở)

Ingredients: stock

1kg chopped beef bones
250g cheap beef cuts (cheek)
2.5L cold water
4 cloves garlic
30g root ginger, sliced
2 shallots, peeled and cut in half
3cm piece of cinnamon stick
3 star anise
1 black cardamom pod, cut in half
4 tbsps fish sauce

Ingredients: to serve

300g beef rump steak, sliced
400g fine rice noodles
2 spring onions, finely sliced
2 small red chillies, chopped
120g beansprouts
Handful of sweet basil, coriander and mint
2 limes, cut into six pieces

Cracked black pepper

1. In a frying pan, toast the ginger and shallots until blackened.
2. Place beef bones and cheek in pan and cover with the cold water. Bring to boil; skim off any scum.
3. Reduce heat. Add the ginger, shallots and remaining stock ingredients; simmer gently for 3-4 hours. Do not let it boil rapidly – liquor will turn cloudy and bitter.
4. Remove beef cheek, then strain stock. Keep hot in a clean pan.
5. Blanch rice noodles in boiling water; drain.
6. Slice cheek into slivers.
7. Arrange noodles in bowls and top with raw and cooked slices of beef.
8. Pour over the boiling stock; sprinkle with spring onions.
9. Serve with remaining garnish.
